Goelles is a family run business focusing on production of various vinegars, liquors, schnapps and special vinegar-based jellies. What strikes you the most is the incredibly modern look & feel of the production site and at the same time deep adherence to old methods and approaches of preparing vinegars. It starts from growing a certain type of apple trees – it has to be an old breed and not the currently developed varieties of “high-tech” apple trees. And it continues with the actual method of maturing the vinegars. Apple-based vinegars are matured in the wooden casks which gives them a unique smoky flavour. The longer you preserve the vinegar in the cask, the sweeter and more concentrated becomes the end product. The oldest vinegar produced at this site is a 20-year maturity vinegar called XA. It starts its maturation process in the big (dimension) cask and throughout the maturation it is being poured into smaller cask due to evaporation ending in a small (dimension) barrel. All other fruit-based vinegars are stored in metal containers to preserve the flavour of the fruit as wooden cask usually overpowers the delicate fruit flavour.

Once you enter the cellar where casks are stored, you are immediately enveloped in an intoxicating aroma of sweet and smoky balsamic vinegar smell. It is absolutely irresistible! The only thing that stops you from moving in permanently is the dampness of the place. Then comes a happy moment when you move to a special building, where older vinegars are passing their final stage. It is a relatively small room compared to the main cellar; level of dampness is significantly less and a row of beautiful bottles is awaiting to be tasted by you! A world of new scents and tastes is about to conquer your palate. You start with younger vinegars that are more on the sharp edge: red wine vinegar, white wine vinegar, rose wine vinegar, beer vinegar (!), some fruit-based vinegars such as raspberry, pear, apple, plum, cherry, apricot and even tomato! Each vinegar has a very distinct flavour and can be a great compliment to many dishes – it is only the matter of your taste, preference and imagination. For example, apricot vinegar is a beautiful accompaniment to the fish dishes and can even replace lemon when cooking. Raspberry vinegar makes a great pairing with asparagus dishes. Tomato vinegar goes well with beef carpaccio & summer fresh vegetables. Then comes a more matured line of balsamic vinegars: among them is interesting kind of matured apple vinegar combined with fresh grape juice closer to the end of its maturation. The taste is very smooth, more on a sweet side and has a nice acidity kick. There are also balsamic vinegars made out of wine, pear, and apple. We particularly like the pear balsamic vinegar as its flavour is very strong, it goes well with salads and adds an elegant flavour to the salads.

Cheese lovers would be pleased to discover that Goelles offers 3 vinegar-based jellies: raspberry, quince and apple balsamic vinegar. I will be very laconic: it is an absolute must buy!

Those of us, who are looking for high quality liquors or, schnapps, would need to stay at least another hour to explore Goelles flavours. Schnapps distillery room is not big, but has very impressive equipment. Make sure to peak into it before you leave!

Last, but not least, you will most likely not leave bare handed as we are sure you would be able to find something special for yourself.
